WHAT I ATE TODAY | Lunch

ZUCCHINI PASTA


PREP TIME : 10 minutes      COOK TIME : 2 minutes      TOTAL TIME: About 12 minutes     SERVES: 1

INGREDIENTS

 1 Zucchini

1/2 cup Fresh Basil

1 cup Sun Dried Tomatoes

Chopped Red Pepper

1 cup Olive Oil

1 clove Garlic

Chopped onions

TO MAKE

Use a Spiralizer or peeler to shred Zucchini. Using a blender or a hand mixer, combine sun-dried tomatoes, olive oil, onions, garlic, onions, basil, red pepper, and mix together. (use a pinch of salt and pepper to taste)  Add more olive oil if you want your sauce thinner. Add sauce to shredded Zucchini, mix and enjoy. For a warm alternative, cook zucchini for 1 minute before adding sauce.
