SUNNY SIDE AVOCADO TOAST


PREP TIME : 5 minutes      COOK TIME : 2 minutes      TOTAL TIME: About 50 minutes     SERVES: 1

INGREDIENTS

 2 slice Whole Wheat Bread

2 Eggs

1/2 Avocado

Salt and Pepper

TO MAKE

In a non-stick frying pan add butter or olive oil over low heat. Crack eggs into the frying pan and cook until the tops of the egg whites are fully cooked but the yolk is still semi-runny. Using a fork, mash avocado inside of the outer skin until texture is smooth. Spread avocado on each slice of toast, add eggs on top, sprinkle with a little salt/pepper to taste and enjoy!
