Even as a non-vegan I could never bring myself to try the infamous “BLT” sandwich; the thought of eating a sandwich smothered with mayonnaise and bacon never sounded appetizing to me. Then, of course, nothing with mayonnaise ever sounds appetizing to me anyway, as I despise the condiment so much. But that’s a whole other story.
Since becoming a vegan I have expanded my eating palate consequently, I am more open to trying new things and experimenting with foods that I would otherwise never eat as a non-vegan; thus, allowing me to cook and enjoy gobs of new recipes.
Coincidently the Vegan BLT was among my top choices this week when selecting a new recipe to try out and it was definitely one of my favorite recipes ever!
With just 5 simple ingredients, this vegan BLT is sure to be the easiest, best-tasting recipes you’ll ever try, I promise!
This recipe makes the perfect lunch or weeknight dinner. Delicious on its own but pairs perfectly with sweet potato fries, french fries or salads.
PREP TIME : 5 minutes COOK TIME : 5 minutes TOTAL TIME: 10 minutes SERVES: 1

2 slices of vegan Sandwich Bread
3-4 slices of Vegan Bacon ( I used the LightLife Meatless Veggie Bacon Strips)
1/2 ripe roma tomato, thinly sliced
2 leaves green lettuce
1/4 Avocado, smashed (with a sprinkle of salt/pepper and fresh lemon juice)
TIP: Vegan butter is a great alternative to avocado in the sandwich, tried it with versions and they were both great!
- Toast bread (optional)
- While bread is toasting heat skillet over medium heat, once hot add vegan bacon and cook to your liking.
- Once bread is finished toasting and the bacon has fully cooked, you can begin to assemble your sandwich.
- Spread smashed avocado or condiment of your choice on toasted bread slices then add on lettuce, tomato, and bacon. Cut in half (optional) and enjoy!
